tamales are a tradition enjoyed in Mexico for special celebrations and holidays.
Labor intensive, the ladies of extended families come together for large tamale
making gatherings. Tens, if not hundreds,
of tamales are made in batches; to be later enjoyed for breakfast, lunch or
dinner over multiple festive days.
Tamales freeze very well and resulting are very easy to keep on hand.
